Easter is one of our favourite times of year. With endless amounts of chocolate (that we may have already started on) and a long weekend to relax and enjoy ourselves in the mild spring weather, it’s hard to imagine how you could ever improve it.
That’s where gin comes in. This year, especially, we’re all in need of a good break. So, we’ve set out a weekend of plans for the perfect gin-lover’s Easter, all you have to do is enjoy them!
This Easter is going to be a good one, read on to discover our selection of choc-tails and gin-fused bakes.
Good Friday:
Get started on a weekend of fun with a bake which combines two of the best ingredients: Chocolate and Gin.
Try out our extra special cherry & chocolate gin bake. An added bonus? It’s vegan!
Ingredients:
Cake:
100ml Raspberry & Elderflower Didsbury Gin
100g fried sour cherries
300g plain flour
85g cocoa powder
200g brown sugar
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
150ml sunflower oil
350ml almond milk
150ml agave syrup
Icing:
150g icing sugar
75g vegan margarine
50g vegan dark chocolate
Method:
Cake:
Soak the cherries in the gin overnight.
Preheat the oven to 160 degrees.
Mix the flour, cocoa powder, baking powder, bicarb and sugar in a bowl.
In a separate bowl, whisk the almond milk, oil and agave syrup.
Slowly pour the wet mix into the dry mix and fold in, until smooth.
Fold in the gin-soaked cherries.
Line a 20cm cake tin.
Pour the mix into the tin and bake for 60 mins.
Icing:
Whisk together the icing sugar and margarine until light and fluffy.
In a microwaveable bowl, gently melt the dark chocolate.
Fold the melted chocolate into the icing.
Cool in fridge for 30mins.
Once baked cake is cool, whisk the icing and spread over the bake.
Decorate with maraschino cherries.
Saturday
Enjoy a laidback weekend Brunch with one of our favourite simple cocktails, the Breakfast Martini!
You’ll Need:
50ml Blood Orange & Ginger Didsbury Gin
15ml triple sec
15ml lemon juice
1 spoon orange marmalade
Method:
Stir marmalade with Blood Orange & Ginger Didsbury Gin in the base of a shaker until dissolved.
Add other ingredients and shake again until chilled.
Strain into a chilled glass and garnish with an orange slice and even a triangle of toast if you’re feeling fancy.
Easter Sunday:
Boozy Easter Hot Chocolate
If you’ve found yourself with an abundance of chocolate that you don’t know what to do with, here’s the perfect solution. Use some of it for a boozy hot chocolate.
You’ll Need:
50ml Didsbury Gin Original
60g your favourite chocolate
180ml milk
To Garnish:
Whipped cream
Marshmallows
Broken up easter egg pieces or mini eggs
Method:
Chop the chocolate up and place into a large mug.
Heat up your milk and pour it over the chocolate, stir until melted and combined.
Pour in the gin and stir to combine.
Garnish with a good helping of whipped cream then scatter over marshmallows and a chocolate of your choosing!
Easter Monday:
If you’ve not yet cracked open your Hot Cross Bun Infused Gin we recommended last week, now’s the time! We like to enjoy ours in a martini or for a long drink, pour 25-50ml over ice and top up with ginger beer.
