Surely chocolate week is everyones favourite week? And what better way to celebrate than by making Didsbury Gin boozy chocolate truffles!

Ingredients:
For the Chocolates:
50ml Original Didsbury Gin
100g high quality 70% dark chocolate
2tbsp double cream
50g unsalted butter
Lime zest & juice
For Finishing:
Cocoa powder
White chocolate & green coloured piping
Method:
In a Bain Marie, heat the dark chocolate and the cream and stir slowly until melted.
Chop the butter into small pieces and add to the mix.
Add the gin zest and juice the lime, add to the mixture.
Add a hand whisk to mix until smooth.
Pour into a sealable container and place in fridge for at least 4 hours.
Once the mixture had firmed up, take tablespoon of the mixture and roll into small balls and place on greaseproof paper.
Set aside in the fridge, for minimum of 2 hours
To Finish:
To finish, we have decided on two choice finishes:
1) Roll your chocolate balls into high quality cocoa powder for an authentic truffle look
2) Melt 100g white chocolate in a Bain Marie.
Take the white chocolate off the heat and continue to stir until it cool and slightly thickens in consistency.
Dip the chocolate balls in the white chocolate and place on paper to cool.
With the remaining white chocolate, add a touch of green food colouring to reach your desired green colour.
Place green chocolate in piping bag.
Create your own pattern on the top of each chocolate
Leave to set and ENJOY!
