This week, we’ve taken a classic British bake to the next level by adding Didsbury Gin for the ideal boozy bake. We recommend pairing this Didsbury Gin-fused Lemon Drizzle cake with a big G&T!

You’ll Need:
Cake:
35ml Didsbury Original Gin
100g unsalted butter
150g caster sugar
2 medium eggs
Zest of 2 lemons
150g self-raising flour
4tbsp milk
Drizzle:
70ml Didsbury Original Gin
50g caster sugar
Juice of 2 lemons
Icing:
50ml Didsbury Original Gin
75g icing sugar
Zest of x1 lemon
Method:
Cake:
Preheat oven to 180°
Cream together the butter and sugar until light and fluffy.
Beat the eggs, add to the mix, then add the self-raising flour.
Add 35ml Didsbury Gin, zest of 2 lemons and 4tbsp milk.
Fold the mixture together until combined.
Line a loaf tin and pour the mixture in.
Bake for 45 mins until bake has risen and is golden.
Drizzle:
Heat the sugar, lemon juice and gin until sugar has dissolved.
Once the cake is baked, drizzle the mixture over the cake.
Leave to cool.
Icing:
Beat together the gin and icing sugar until smooth.
Pour over the cake.
Decorate with a sprinkle of lemon zest over the top.
